Jump to RecipeHalloween is one of our favorite holidays and we are always looking for fun new drinks to try during our annual Halloween party. We especially love drink recipes that can be made in bulk and are simple to make. This Halloween inspired Blood Orange Bellini, or Boolini, as my wife likes to call it, has become a regular in our Halloween party repertoire. It goes perfectly with our Skull Pizza Calzones and Roasted Pumpkin Seeds.
This Halloween inspired Bellini is super simple to make with only a few ingredients. It can also be made in bulk, which makes it perfect for a Halloween party, or if you just like drinking a lot more than you should.
The following recipe will make about 4-6 Blood Orange Bellini's, but as mentioned it is easily scaled up if you want more.
Making the Halloween Inspired Blood Orange Bellini
To make the Boollini you will need some blood orange Italian soda, sweet white wine, and some blood oranges. This cocktail can also be made as a non-alcoholic beverage by omitting the white wine. If you can't find blood oranges the recipe can be made with any seedless orange variety. We especially like Cara Cara oranges.
The first step is to make a simple blood orange puree. To a blender or food processor add 3 peeled blood oranges, 4 ice cubes, and 1 tablespoon of sugar. Blend until smooth. This puree will contain a fair amount of pulp so if you want it less pulpy, or if you used a orange variety with seeds you can pass it through a medium mesh strainer.
To make the Blood Orange Bellini combine about 2 cups of the blood orange Italian soda with 2 cups of chilled white wine. Any sweet white wine will work with this recipe, but we typically use a Riesling. We also recommend making sure the wine and Italian soda are both chilled.
Now it is time to complete your Boollini. In a champagne glass, pour about a tablespoon of the blood orange puree. Top with the Italian soda and white wine mixture. Garnish with a slice of blood orange. Enjoy!

Blood Orange Bellini
Equipment
- Blender or Food Processor
- Champagne Glasses
Ingredients
- 2 Cups Sweet White Wine
- 2 Cups Blood Orange Italian Soda
- 3 Blood Oranges or Other Seedless Orange Variety
- 1 Tablespoon Sugar
- Ice
Instructions
- Peel the oranges and add them to a blender or food processor along with the sugar and 4 ice cubes. Blend until smooth. If desired you can pass the puree through a medium mesh strainer if you desire less pulp.
- In a separate container, combine about 2 cups of the blood orange Italian soda with 2 cups of chilled white wine.
- To finish the cocktail add about one tablespoon of orange puree to the bottom of each champagne glass. Top with the wine/soda mixture and garnish with orange peel.
