Authentic Chimichurri Sauce
Chimichurri is a basic condiment originating from Uruguay and Argentina. Traditionally most consist of fresh parsley, garlic, olive oil, and red wine vinegar. Our version also includes fresh oregano and diced chili for a little pop. This is a super easy recipe that can be prepared in just a few minutes.

Making The Homemade Chimichurri Recipe
Ingredients for fresh Chimichurri
To make our Authentic Chimichurri Recipe you will need just a handful of ingredients:
Italian flat leaf parsley- Fresh parsley provides the heart of any good Chimichurri recipe. Look for fresh, green parsley and avoid any that is browning or soggy.
Red wine vinegar- Vinegar provides the needed acidity to the green chimichurri. Use a high quality red wine vinegar.
Extra virgin olive oil- Again, use a high quality extra virgin olive oil. With such a simple dish, you do not want to use low quality ingredients.
Jalapeno or Fresno pepper- Fresh peppers add a little pop to the fresh chimichurri recipe. Use jalapeno for a milder version or Fresno chile if you want to have a spicy chimichurri.
Fresh oregano- We fell that the fresh oregano is really what brings this Chimichurri with fresh herbs to the next level. We have used Greek oregano and Mexican oregano in this recipe and both work well.
Fresh garlic- Finally, fresh garlic rounds out this fresh South American Chimichurri recipe. Mine the garlic as fine as possible.
Prep the ingredients
First, mince your garlic and jalapeno and then finely chop the parsley, oregano, and jalapeno.
Hand chopping the herbs for the chimichurri seems to make a big difference in the final result. Moreover, using a food processor always seems to result in a subpar chimichurri. Take the extra time and put your knife skills to work. The fresh chopped herbs also look better when prepared this way.
When you are done prepping the herbs, mix them with the jalapeno, garlic, sea salt, olive oil, and red wine vinegar. Most importantly, you will want to use a high quality extra virgin olive oil and red wine vinegar. Similar to wine, you can definitely tell the difference between the good stuff and the bottom shelf stuff.
Rest the chimichurri to allow the flavors to meld
Next, cover tightly with plastic wrap. After that, let the flavors meld at room temp for 4 hours or overnight. Don't worry, the chimichurri with jalapenos and fresh herbs is perfectly fine sitting out overnight. More importantly, it will develop a better flavor this way. After a couple days you will want to refrigerate it, if you have not used it all by then.

Frequently Asked Questions
Occasionally chimichurri can be bitter depending on the freshness of the herbs and is more common if a food processor is used of or the fresh herbs and over worked when cutting. If this occurs, try adding a little more red vinegar or a little honey of sugar to counteract the bitterness.
Chimichurri is typically aged and gets better with a little time. Typically it will last at least a week and room temperature and 3-4 weeks in the refrigerator. If refrigerated the olive oil may congeal, and the sauce may need to warm up before use.

Easy Chimichurri Recipe
Ingredients
Chimichurri Sauce
- ¾ Cup Italian Flat Leaf Parsley
- 2 Tablespoon Red Wine Vinegar
- ½ Cup EVOO
- 1 Small Jalapeno or Fresno Pepper Finely diced
- 1 Tablespoon Fresh Oregano minced
- 1 Tablespoon Garlic minced
- 1 teaspoon Sea Salt
Instructions
Chimichurri Sauce
- Finely chop the parsley and oregano. Dice the jalapenos and mince the garlic.
- In a small bowl, combine all of the chimichurri ingredients. Let set, covered, at room temperature for at least 4 hours or overnight.
