What You'll Need for Blackstone Steak Bites
- Cut of Steak: While you can use various cuts, New York strip (NY strip) or flat iron steak are excellent choices for Blackstone steak bites. Beef tenderloin tips also work great, are our one of our favorites for making the tender garlic butter steak bites. These cuts offer great flavor and tenderness. You'll need 1-2 pounds of steak depending on how many you are serving.
- Oil: Choose an oil with a high smoke point, such as avocado oil, or another neutral oil.
- Seasoning: For this recipe we use a Brazilian steak seasoning. If you can't find it you can use a mixture of Kosher salt, black pepper, garlic powder, thyme, and dehydrated red pepper or use your own beef rub or a store-bought steak seasoning.
- For Garlic Butter Sauce: For the garlic butter you will need butter, salted or unsalted, and minced garlic. Fresh parsley is an optional addition.
The Blackstone Steak Bites Cooking Process
Prep the Steak: Cut the steak into bite size pieces or bite-sized cubes. Aim for even sized pieces to ensure even cooking.
Season the Steak: In a mixing bowl or plastic bag, toss the steak bites with oil and the Brazilian steak seasoning. Make sure the steak evenly coated.
Make the Garlic Butter: Bring the butter to room temperature to soften and then add the minced garlic. If using stir in fresh parsley.
Preheat the Blackstone Griddle: Heat your Blackstone griddle to medium-high heat. Griddle temperatures are important for best flavor! If using a pellet grill combo or other flat top grill, ensure it is preheated as well, typically about 400 degrees is an ideal temperature.
Cook the Steak Bites: Once the griddle is hot, place the steak bites in a single layer on the Blackstone griddle. Avoid overcrowding the griddle; cook in batches if necessary.
Sear and Cook: Cook for 2-3 minutes, or until the steak bites are seared and cooked to just below your desired doneness. The goal is to get a nice sear on the outside while keeping the inside tender. This will depend on the thickness of the bite size pieces.
Stir in the garlic butter: Once seared, stir in the garlic butter and continue cooking in the melted garlic butter until you reach your desired steak doneness.
Serve the warm steak bite appetizer immediately while warm.

Brazilian Style Garlic Butter Blackstone Steak Bites
Equipment
- Blackstone or flat top griddle
Ingredients
- 2 Pounds Steak New York Strip or Tenderloin tips
- 1 Package Brazilian Steak Seasoning
- 2 Tablespoons Neutral Oil Like Avocado Oil
Garlic Butter
- 3 Tablespoons Butter Softened
- 1 Tablespoon Minced Garlic
- 1 teaspoon Fresh Parsley Optional. Finely chopped.
Instructions
- Cut the steak into bite sized pieces.
- In a gallon bag, combine the steak bites with the oil and the steak seasoning packet. Mix well to evenly combine.
- Mix the minced garlic with the softened butter.
- Preheat your Blackstone or griddle to Medium-high heat or about 400 degrees.
- Without crowding the meat, cook the steak bites for about 2-3 minutes, until browned on all sides. Stir in the garlic butter and toss the steak bites in the butter. Continue cooking to desired doneness, about 1-2 more minutes.
- Serve immediately while warm.
