Pour the wet ingredients into the dry ingredients and whisk until just combined and smooth. Don't overmix. The mixture should have the consistency of a like a thin pancake batter.

Preheat the Griddle: Heat your griddle to medium-low heat (around 300-325°F. Lightly grease the surface of the Blackstone or griddle with oil.
Fill the Squeeze Bottle: Pour the batter into your squeeze bottle, funnel or piping bag.
Create the Funnel Cake: You will want to cook the funnel cakes in batches. Add ½ a tablespoon of butter to the griddle. Once melted add some of the batter, in thin strips, working back and forth and then across back and forth the other way. Aim for a thin, lacy design. Don't worry about perfection; the irregular shapes are part of the charm.

Cook and Flip: Cook for about 1-2 minutes, then flip the funnel cake over with a thin spatula and cook for 60 more seconds. If needed flip one additional time and cook for 30 seconds, or until golden brown and crispy.

Repeat the process with the remaining butter and batter.
Drain and Dust: Remove the cooked funnel cake from the griddle and place it on a paper towel-lined plate to drain any excess oil (there is not typically much with this method).

Serve and Enjoy! Griddle funnel cake is best served fresh and warm. Top the funnel cakes with powdered sugar, caramel and chocolate sauce, and
strawberries, or use your favorite toppings.

Tips and Tricks for Funnel Cake Success:
- Batter Consistency: The batter should be pourable but not too thin. If it's too thick, add a splash of milk.
- Griddle Temperature: If the funnel cake browns too quickly, lower the heat. If it's taking too long, increase the heat slightly.
- Oil Amount: You only need a light coating of oil on the griddle. Too much oil will result in a greasy funnel cake.
- Creative Toppings: While powdered sugar is classic, feel free to get creative with toppings like chocolate sauce, fruit, whipped cream, or sprinkles.
