We have had a love affair with making pizza in our pizza oven for years. We were one of the first to buy an Ooni pizza oven when they were first released (then called Uuni) and have made hundreds of pizzas on our portable pizza oven. Last year our kids asked me to make a dessert pizza on the Ooni and boy am I glad that I did. This Cinnamon Apple Crisp Pizza is topped with cinnamon applesauce, crisp apple slices, cinnamon sugar, toasted oatmeal, and finished with a sweet vanilla icing. It is the perfect sweet pizza to cook in your Ooni or other pizza oven but turns our great in a home oven as well.

Making the Cinnamon-Apple Dessert Pizza
To make the Apple Crisp Pizza you will need to make pizza dough, prepare the toppings, and make the cream cheese icing for the dessert pizza.
Making dough for dessert pizza
This pizza dough is formulated for the high heat of a pizza oven and uses 00 flour. 00 flour is becoming more available at the grocery store, or you can buy it on Amazon.
To make the dessert pizza dough first proof the yeast by adding the active dry yeast to the warm water and stirring vigorously. The yeast should foam. If the yeast clumps and floats on top of the water, it is dead and you need new yeast.
Next add the flour and salt to a stand mixer with a dough hook and add the cold water. Mix slowly for 1 minute then add the warm water and yeast. Mix for about 1 minute on low, then stop and scrape the sides of the bowl.
By hand or using a stand mixer with a dough hook, knead the dough for about 5 minutes until the dough is smooth. Depending on environmental conditions, you may need to add a little more flour or water to the mixture. (The dough should not be dry or too sticky. You should be able to gently pinch the surface of the dough without it sticking to your fingers.)
Place the dessert dough ball on a plate and cover with a damp towel. Let the dough sit at room temperature for 1 hour.
After 1 hour, uncover the dough ball and divide in half. Form each dough ball by gently stretching the dough and folding the stretched dough to the bottom of the ball. Rotate the ball 90 degrees and repeat. Repeat this process about 5-6 times finishing by pinching together the bottom of the ball. The surface of the dough should be smooth and not torn. Repeat with the 2nd dough ball. Cover with plastic wrap and let rise for 2-3 hours, until doubled.
Prepare the oat topping for the apple crisp pizza
While the dough is rising you can prepare your toppings for your Ooni dessert pizza. Mix the oats with 2 tablespoons of melted butter and mix to combine.
Prepare the icing and cinnamon sugar for topping the dessert pizza
To make the icing, mix the powdered sugar, vanilla extract and milk in a small bowl then put in a small plastic bag or a piping bag.
Combine the cinnamon and sugar in a small bowl and mix to combine. Set aside. If desired you can also use a premade cinnamon sugar, if you do not want to make your own.
Preparing the crust and topping the pizza
To finish making your pizza hand stretch the dough on a well floured surface. Do this by pressing down in the center of the dough ball and stretching he dough outward. Be careful not to tear the dough. When finished you should have a roughly 12-14-inch circle.
Place the pizza dough on a floured pizza peel then baste the dough with 1-2 tablespoons of the melted butter.
Sprinkle the buttered dough with the cinnamon sugar then top about ½-⅔ of a cup of the apple sauce. Next, top with half of the sliced apples and half of the oats.
Cooking Dessert Pizza in an Ooni Pizza Oven
Prepare your Ooni pizza oven or other pizza oven and preheat to about 450-550 degrees. Launch the dessert pizza into the oven and cook for about 5-6 minutes, rotating the pizza about every 1-2 minutes to ensure even cooking.
Once the pizza has cooked to your desired doneness, remove the Ooni Dessert Pizza from the pizza oven. As with any pizza oven pizza, monitor the pizza while it is cooking and check the bottom as you rotate it, to ensure the bottom of the pizza is cooking evenly and not overcooking.
Making the Apple Crisp Dessert Pizza in a Home Oven
The Cinnamon Apple Dessert pizza can also be prepared in a home oven. If cooking the dessert pizza in a home oven we recommend using a Cooking Steel, pizza steel, or pizza stone.
Preheat your oven with the Cooking Steel or pizza stone to 425 degrees and allow to preheat for at least 30 minutes.
Slide the dessert pizza onto the Cooking Steel or pizza stone and cook for about 5 minutes. Rotate the pizza 180 degrees and cook an additional 3-5 minutes, until the pizza is cooked to your desired doneness.
Note, the pizza will cook faster on a Cooking or Baking Steel than a pizza stone, so monitor the bottom of the crust to make sure it is not getting too dark.

Serving the Pizza Oven Dessert Pizza
Remove the pizza to a cutting board and top with half of the icing.
Cut into slices and serve warm.

Frequently Asked Questions
We recommend using an 00 flour for making pizza dough to use in a pizza oven. This flour is able to stretch more thinly without tearing and is more resistant to burning in the hot temperature of a pizza oven, compared to other flours.

Ooni Apple Crisp Dessert Pizza

Dough:
- 3 ¼ Cups Flour preferably 00 Flour or pizza flour
- ¼ Cup Warm Water
- ¾ teaspoon Active Dry Yeast
- 1 Cup Cold Water
- 2 teaspoons Salt preferably fine sea salt
Toppings:
- 1.5 Cups Cinnamon Applesauce
- 1 Apple peeled and thinly sliced
- 3 Tablespoons Butter melted
Oats:
- 4 Tablespoons Butter melted
- ⅔ Cup Oats
Cinnamon Sugar
- 2 Tablespoons Sugar
- 1.5 teaspoons Cinnamon
Icing:
- 1.5 Cups Powdered Sugar
- 2 Tablespoons Milk
- 1 teaspoon Vanilla Extract
Instructions
Dough:

- Mix the oats with 2 tablespoons of melted butter and mix to combine.
- Mix the powdered sugar, vanilla extract and milk in a small bowl then put in a small plastic bag or a piping bag.
Baking the Pizza
- Preheat your oven with the Cooking Steel or pizza stone to 425 degrees. If using a pizza oven, preheat to 450-550 degrees.
- On a well-floured surface hand stretch the dough into a roughly 12-14-inch circle.
- Place the pizza dough on a floured pizza peel. Baste the dough with 1-2 tablespoons of the melted butter.
- Sprinkle the buttered dough with the cinnamon sugar then top about ½-⅔ of a cup of the apple sauce. Next top with half of the sliced apples and half of the oats.
- Pizza Oven: Launch the dessert pizza into the pizza oven and cook for about 5-6 minutes, rotating the pizza about every 1-2 minutes to ensure even cooking., and ensure the bottom of the pizza is not getting over cooked.
- Home Oven: Slide the dessert pizza into the oven and cook for about 5 minutes. Rotate the pizza 180 degrees and cook an additional 3-5 minutes, until the pizza is cooked to your desired doneness.
- Remove the pizza to a cutting board and top with half of the icing.
- Cut into slices and serve warm.
