They're incredibly versatile, cook up in a flash, and are packed with the amazing benefits of salmon. Plus, the little salmon nuggets are just so much fun to eat! While we love making this easy salmon bite recipe on a Blackstone, the recipe can be made just as easily on a stovetop.

Making the Blackstone Cajun Salmon Bites
Making Cajun salmon bites at home is simple and delicious.
Ingredients for the Salmon Bite Recipe
The key to great Cajun salmon bites is good quality salmon and a flavorful Cajun seasoning.
Salmon: You will need about 1-1.5 pounds of salmon filets. We prefer sockeye salmon or other Pacific salmon varieties, but you can use Atlantic salmon as well. You will want to have the skin removed from the filets.

Cajun Seasoning: You can buy pre-made Cajun or blackening seasoning, or whip up your own blend for customized spice. We typically use our Homemade Cajun Seasoning. You will need about 2-3 tablespoon of the seasoning typically, but you can adjust the amount of rub to fit your preferences.
Cooking Oil: Typically a couple tablespoons of olive oil or other cooking oil is all you will need to prepare the cook surface. The salmon is not cooked at high heat, so olive oil typically works just fine.
Salt and Pepper: Not always needed, but a little salt and pepper can be used, to taste, if you feel the seasoning you used needs any adjusting.
Preparing and Cooking the Cajun Salmon Bites
Prep the Salmon: Pat the salmon fillets completely dry with paper towels. This step is crucial for achieving those crispy salmon bites! Using a sharp knife, cut the salmon into 1-inch cubes (or "salmon cubes" or "salmon nuggets"). Be sure to remove the skin if that has not already been done.

Seasoning Time: Place the salmon cubes in a large bowl. Sprinkle generously with Cajun seasoning. Toss gently to ensure all the salmon pieces are evenly coated.

Cook 'Em Up:
Heat your Blackstone, or griddle, over medium heat and make sure the surface is well oiled. If you are not using a Blackstone, you can also use a large non-stick skillet. Once hot, add the salmon cubes in a single layer, making sure not to overcrowd them. You may need to work in batches. Cook for 2-3 minutes per side, or until golden brown and cooked through. The FDA recommends cooking to 145 degrees, but we typically pull them off around 130 degree F.

Air Fryer Method : Arrange the seasoned salmon in a single layer in your air fryer basket, ensuring not to overcrowd it. Cook at 400°F (200°C) for 8-12 minutes, shaking the basket gently halfway through, until the salmon is cooked through and lightly crisped. Cooked salmon should flake easily.
Oven Method: Line a baking sheet with parchment paper. Arrange the salmon cubes in a single layer on the prepared baking sheet. Bake at 400°F (200°C) for 10-15 minutes, or until cooked through.
