Sometimes you just need a quick and easy meal. Or, full disclosure, you are on vacation and need a quick and easy blog post. That said, just because it is easy does not mean that it can't be absolutely delicious. I used to love tuna fish sandwiches as a kid. As I got older, however, it became a dish that I didn't really think about making. It wasn't until my son discovered that he loved tuna fish sandwiches that this super easy sandwich started showing up in our household again. It was not long before we began to grow a little tired of the same old tuna fish sandwich so my son and I set out to make a spicy tuna melt, with a little more pizzazz. The result is our Wicked Good Tuna Fish Sandwich.
Making The Wicked Good Tuna Fish Sandwich: Spicy Tuna Melt
Gather your ingredients
To make this sandwich you will need tuna fish, lemon juice, minced garlic, real mayonnaise, and Wickles Spicy Red Sandwich Spread. We have always been a fan of Wickles products in our home and their spicy sandwich spread was the perfect addition for our spicy tuna melt recipe. Wickles is typically available in most supermarkets.
This is a simple recipe with only a few ingredients so you want to make sure that your ingredients are high quality. We choose to use a sustainably caught Yellowfin tuna for our sandwich. If you want to add a little more kick, we have also had great results with jalapeno tuna fish. Fresh minced garlic is fantastic, but if you want to keep it super simple just use a little Garlic Squeeze, which has become one of our favorite recipe shortcuts.
Mix your ingredients
Drain the tuna if it has a lot of excess liquid then add to a medium sized bowl. To the bowl with the tuna and the Wickles, mayonnaise, garlic, and lemon juice. Gently mix to combine.
Mix well until evenly combined but try not to completely break up all of the tuna.
Assemble your Wicked Good Tuna Fish Sandwich
To assemble your Spicy Tuna Melt you are going to need some sourdough bread and pepper jack cheese. You will also need a little softened butter to butter the bread with prior to grilling the sandwich.
Pick a high quality sourdough or better yet make your own. We typically make a trip to one of the great artisan bakeries in our area. We are also lucky enough to have a great bakery, in Farm to Market Bread Company, available at most of our stores.
Place a slice of pepper jack cheese on one slice of the bread and top the other with some of the tuna mixture.
Cooking your Spicy Tuna Melt
Heat your skillet or flat top grill to medium heat, or about 325 degrees. Butter both sides of the sandwich well, with the softened butter. Grill the sandwich until golden brown or done to your liking, typically 4-5 minutes, then flip and brown the other side.
Remove from the heat and cut in half the sandwich. Serve with your favorite soup, or some Always Crispy French Fries. Better yet pair it up with some Smoky Hatch Mac and Cheese or Jalapeno Twice Baked Potatoes both of which pair very well with this flavorful sandwich.

Wicked Good Tuna Fish Sandwich: Spicy Tuna Melt
Equipment
- Skillet or Flat top grill
Ingredients
- 9 ounces Tuna or Jalapeno Tuna
- ⅓ Cup Mayonnaise or Aioli
- 1 Tablespoon Wickles Red Sandwich Spread
- ½ tea Garlic Squeeze or Minced Garlic
- 1 tea Lemon Juice
- 8 Slices Sourdough Bread
- 4 Slices Pepper Jack Cheese
- Butter for buttering the bread
Instructions
- Drain the tuna and add to a bowl with the mayo, Wickles sandwich spread, lemon juice, and garlic. Stir gently until combined.
- Place a slice pepper jack on one slice of sourdough bread and some of the tuna mix on the other slice. Form the sandwich and butter both sides of the sandwich.
- Grill on a flat top or in a skillet over medium heat, about 325 degrees, until the bread is nicely browned and toasted. Flip the sandwich and brown the other side.
