It make the prefect side for pulled pork, smoked fried chicken, or burnt ends, or as a topping for BBQ sandwiches or our spicy, smoked sloppy Joes. It is a quick recipe that can be whipped up in minutes.

Making the Jalapeno Coleslaw with Bacon Aioli
Ingredients needed for the jalapeno bacon coleslaw
To make the Jalapeno Bacon Coleslaw to will need a few common ingredients:
- 14 ounce Package of coleslaw mix with shredded carrots
- 3 Jalapenos thinly sliced
- ½ Red Onion thinly sliced
- ½ cup Bacon Aioli
- 2 Tablespoons Apple Cider Vinegar preferably honey
- 4 teaspoons Sugar
- 4 teaspoons Lime Juice
- ¼ teaspoon Black Pepper
- ¼ teaspoon Cumin
- ¼-1/2 teaspoon Cayenne Pepper (depending on how spicy you want the slaw)
Cabbage- If you want, you can certainly make the coleslaw with a fresh head of cabbage and fresh carrots, but we like the simplicity of just using pre-shredded coleslaw mix.
Apple Cider Vinegar- Feel free to use any apple cider vinegar that you have on hand, but we really like the added touch of sweetness from the Honey Blend. If you are using straight apple cider vinegar you can certainly add a squeeze of honey to the slaw to recapture the sweetness.
Prep and mix the homemade coleslaw
Be sure to thinly slice the onion and jalapenos. The thinner the better, large slices can be distracting from the proper texture of the coleslaw.
Toss the coleslaw mix with the sliced jalapenos and sliced red onion in a medium sized bowl.
Next, in a separate bowl, combine the sugar, black pepper, cumin, and cayenne with the apple cider vinegar and lime juice and mix well to combine, then stir the bacon aioli into the apple cider vinegar mixture. The bacon aioli from Terrapin Ridge Farms has been our go to for this recipe, but feel free to use what is available to you.
Finally, pour the dressing over the coleslaw mix and stir to combine.
The Jalapeno Coleslaw with Bacon Aioli will keep in the refrigerator for several days.
Serving the Jalapeno Bacon Coleslaw
As mentioned earlier this slaw goes great with just about any American style BBQ, but it really shines with pork. We like to serve it on top of our sweet pulled pork sliders along with some spicy cornbread and Hatch Mac and Cheese.
