Italian Sausage and Chicken Soup

Ingredients
  

  • 1 Rotisserie Chicken or Smoked Chicken
  • 1 Pound Hot Italian Sausage
  • 15 Ounce Black Beans Drained
  • 15 Ounce Ranch Style Beans
  • 15 Ounce Light Red Kidney Beans
  • 15 Ounce Southwest Style Corn
  • 32 Ounce Chicken Broth
  • 3 Tablespoons Ranch Seasoning
  • 1 Tablespoons Taco Seasoning
  • 3 Hatch Green Chiles Or 4 Ounce can diced green chiles
  • 8 Ounce Habanero Jack or Pepper Jack Cheese Shredded
  • 8 Ounce Cream Cheese
  • 1 Red Onion Diced
  • 3 Garlic Cloves Minced

Instructions
 

  • Heat a Dutch oven or soup pot over medium heat. Brown the Italian sausage, breaking it up as it cooks.
  • Once the sausage is cooked, add the diced red onion and cook for 4-5 minutes, until softened. Add in the diced green chiles and minced garlic and cook for 1-2 more minutes.
  • Once the vegetables are cooked, drain the excess grease.  Pour in the chicken broth or chicken stock along with the rest of the ingredients.
  • Bring the soup to a boil, then reduce heat to low.  Stir to make certain all of the cheese is fully melted. Simmer for 20-30 minutes then reduce to low until you are ready to serve.
