Grilled Endive Salad with Homemade Poppy Seed Dressing

This grilled endive salad is the perfect summer salad for your next barbeque or cookout. Perfectly charred lettuce is topped with a homemade poppy seed dressing.

6 Belgian Endive 1 Tablespoon Coarse Salt 1 Cup Shaved Parmesan Poppy Seed Dressing ¼ Cup Olive Oil 2 Tablespoons Lemon Juice 1 Tablespoon Honey 1.5 teaspoons Poppy Seeds 1 teaspoon Ground Mustard ½ teaspoon Apple Cider Vinegar ¼ teaspoon Kosher Salt
Combine the salad dressing ingredients and mix well to combine.
Rinse and then halve the Belgian endive lengthwise.
Preheat your grill to at least 500 degrees and set up for direct cooking.
Brush the endive with a little of the poppy seed dressing and sprinkle the lettuce with a little coarse salt.
Grill the endive, flat side down, for about 3-5 minutes, or until the edges of the lettuce are nicely charred.
Remove the Belgian endive to plates and top with the poppy seed dressing shaved parmesan and any other desired salad toppings. Enjoy.
