Grilled Sonoran Hot Dogs are the king of hot dogs. A grilled bacon wrapped all beef hot dog, stuffed into a warm bolillo roll with beans, jalapenos, tomato, and slices of avocado. There is not a more perfect encased meat on the planet.
Using 1 piece of bacon per hot dog, wrap the hot dogs in the bacon. Use a skewer or tooth pick to hold the bacon in place.
Season with your favorite all purpose or pork BBQ rub.
Heat your grill for medium high heat (about 400-425 degrees). Grill the bacon wrapped hot dogs over direct heat. Rotate every couple minutes to cook evenly, and remove when the bacon is done to your liking.
Briefly grill the bolillo rolls then split and fill with refried beans. Add the bacon wrapped hotdog.
Top with tomatoes, jalapenos, avocado slices, and cotija cheese. Top with aioli or mayonnaise. Devour while warm.
