Filled with sausage, green onion, water chestnuts, and ginger, these fried crispy wontons are one of our most requested recipes. They are super simple and make the perfect appetizer at your next gathering or party.
Mix all the filling ingredients. For the best flavor, cover and refrigerate overnight (but at least three hours).
Fill the wonton wrappers with about 1 heaping teaspoon of filling in the middle and fold into an envelope shape. To do this, you take one corner and fold it up to the opposite corner, making a triangle, lightly wetting the point with water to seal it. Next take a corner that is on the fold, and fold it half to three quarters of the way across, into the middle but still along the fold, lightly wetting the point so it sticks. Repeat this with the other corner that is on the fold. Place wrapped wontons on parchment paper until you are ready to fry them.
Fry the wontons in a pan, wok or deep fryer (oil temperature about 350 degrees) until the wontons are golden brown and the meat is cooked through (about 5 minutes). Flip them halfway through the time. Remove from the oil and allow them to cool slightly on a paper towel lined platter or plate.
Enjoy them hot and on their own or with Thai sweet chili sauce or soy sauce. There may be leftover filling, so freeze it for the next time!
