Migas: Mexican Breakfast Skillet

Mexican migas are a traditional Mexican breakfast skillet consisting of cheesy scrambled eggs and fried corn tortillas. This recipe makes the perfect base for additional proteins like ham, sausage, or chorizo.

Ingredients
  

  • 6 Large Eggs
  • 8 Tortillas Cut Into ½ Inch Strips
  • ¼ Cup Diced Onion
  • ¼ Cup Diced Bell Pepper
  • 1 Jalapeno Diced
  • Cup Salsa
  • Cup Chihuahua Cheese or cheddar or cheese of choice
  • Cooking Oil

Instructions
 

  • Beat the eggs in a bowl and add the shredded cheese.
  • Preheat the griddle or pan on the stovetop over medium heat (about 350 degrees).
  • Oil the griddle of pan and sauté the peppers and onion until soft then remove.
  • Toss the tortillas strips with a couple tablespoons of cooking oil then fry until crispy, stirring frequently. This typically takes 7-10 minutes. Remove to a bowl.
  • Cook any additional meats or toppings as desired and remove to a bowl.
  • Cook the scrambled eggs until just set then add in the onions, peppers, tortilla strips and any additional cooked toppings and mix to combine.
  • Add in the salsa and cook for 2 minutes.
  • Serve warm with hot sauce and, if desired, cilantro and slices of avocado.
