These Spicy Texas Smash Burgers take the Oklahoma onion burger and Texas style it with grilled and fried jalapenos, and Colby and pepper jack cheese, cooked on a griddle and then served up on toasted Texas Toast.
Mix the 3 pounds of ground beef with the spice mix and the Worcestershire Sauce, and mix to evenly combine.
Heat your griddle over high heat (500 degrees).
Combine the sliced onion and sliced jalapenos in a bowl. Then divide into 7 equal portions.
Form the meat into 14 equal sized balls (about 3 ounces each).
Brush both sides of the Texas toast bread slices with some butter and brown on the griddle, about 30-60 seconds per side. Remove and set aside.
Working in batches, cook the burgers. For each burger you will need 1 portion of onion/jalapeno mix, 2 burger balls, 1 slice of pepper jack cheese, and 1 slice of Colby Jack cheese. Note: it is best to have everything ready, because things move fast once the cooking starts.
Place the onion portion on the grill and cook for about 30 seconds, then flip the onions over.
Place the burger balls on the griddle, spaced apart, and smash them down as flat as you can with a heavy spatula. Cook for about 2 minutes.
Flip one of the burger patties over and top with the pepper jack cheese. Flip the remaining patty over onto the onions and top with the Colby jack cheese. Cook for about another 1-2 minutes, until the cheese is melted.
Place the 2 burger patties on top of a slice of the grilled Texas toast, top with a few fried jalapenos, any other desired burger toppings, then top with the remaining slice of Texas toast.
