Wood Fired Italian Style Parmesan Wings

Ingredients
  

Coating for Baking

  • 2 Tablespoon Vegetable Oil
  • 1 Tablespoon Kosher Salt
  • ½ teaspoon Black Pepper

Sauce/Coating

  • 2 Pounds Chicken wings: Drumettes and Flats about 24
  • ½ Cup Butter melted
  • ½ Cup Shredded Parmesan
  • ¼ Cup Italian Dressing
  • 1 teaspoon Crushed Red Pepper
  • 1 teaspoon Garlic Powder
  • ¼ teaspoon Onion Powder
  • ¼ teaspoon Garlic Salt
  • ¼ teaspoon Black Pepper

Instructions
 

  • In a plastic bag, coat wings with 2 Tablespoons of vegetable oil, 1 Tablespoon Kosher salt and ½ teaspoon black pepper. 

Prepare the Sauce/Coating

  • Melt the better and combine with all of the other sauce ingredients in a large bowl.

Oven Method

  • Preheat your oven to 425 degrees or 400 for a convection oven.
  • Place the wings on a foil lined baking tray that is sprayed with Pam/cooking oil. 
  • Cook at 425 degrees for 20 minutes. This works even better with a convection oven but drop the temp to 400 degrees for this method.
  • Spray the top of the wings with the cooking spray and flip the wings. Bake for an additional 20 minutes.
  • Remove the wings from the oven and add to the bowl with the Italian-Parmesan sauce. Mix well to combine and then put the wings back on the pan and bake for an additional 5 minutes to set the sauce and melt the cheese.

Wood-Fired/Grill Method

  • Preheat your grill or smoker for 400 degrees and set up for indirect heat.
  • Place the wings on a well oiled grill grate and cook for 20 minutes.
  • Spray the top of the wings with cooking oil and flip them over. Cook for an additional 20 minutes.
  • Remove the wings and add to the bowl with the Italian-Parmesan sauce, coating the wings in the sauce and place back on the grill. Top with any remaining cheese/sauce mixture. Cook for 5 minutes to set the sauce and melt the cheese.
  • Serve warm.
